Our chefs handle the rice delicately with rice vinegar, sugar, and salt so that it has the correct texture and taste. Too much or too little, and the sushi isn’t what it should be.

Once the rice is cooked, our chefs form it into tiny, delicate servings. For nigiri, a tiny mound of rice is the ideal foundation for a slice of fish or topping, whereas rolls need the rice to be firm but even so that they hold together without being overly sticky.
